Chicken Tortilla Soup!

Winter has finally arrived in Chicago. This past weekend we had snow, sleet, ice, and cold. Definitely hibernation weather. Yesterday all I wanted to do was curl up on the couch with a good movie (or rather Downton Abbey) and enjoy a nice big bowl of warm soup.

Luckily I had all the ingredients for a tortilla soup and even a jump start thanks to Pacific's soup starters. Flavoring a spicy soup couldn't be easier; just add chopped veggies, beans, chicken and simmer. Boom. Comfort food is served. I cheated on making tortilla strips and crunched up some tostadas instead, which worked deliciously.

There are currently five varieties of Pacific soup starters including beef, chicken, and vegetable flavors of the Vietnamese soup, Pho. Tom Yum and Tortilla soup are the additional ethnic soup starters. All of these organic broths are gluten free, dairy free, corn free, soy free, yeast free, and low fat. Great for just about every diet.
