Gluten Free Turkey Piccata and a Jennie-O Giveaway


Not too long ago I received an email from a representative for Jennie-O Turkey letting me know about their gluten free recipes section on their website. I'm no stranger to Jennie-O turkey, as I frequently use their ground turkey in place of ground beef in many of my recipes.

I was a little bummed though that their gluten free section only had about 10 recipes. One of which I made years ago from The Biggest Loser Cookbook (the Eggplant Lasagna...it was delicious!)  After checking out the rest of the recipes, I noticed some of them were naturally gluten free, but were not in the gluten free section mainly because they called for ingredients that could contain gluten like chicken broth or tomato soup, but if you read your labels carefully you will find gluten free versions of those ingredients.

Since almost all of their turkey products are gluten free, you really could turn any of the recipes on their site into something delicious and free from gluten, which was just what I did tonight for dinner.  Trying to branch out from just substituting ground turkey in tacos, sloppy joes, or chili I decided to try my hand at the turkey tenderloin.


My family and I have several favorite recipes using pork tenderloin and beef tenderloin, so why not try turkey tenderloin? The recipe for Turkey Piccata sounded delicious, so I made the simple adjustments to gluten free it up.  Substituting Meister's Gluten Free All Purpose Flour in place of "regular" flour and Ancient Harvest Quinoa Pasta for whole wheat pasta, I thought the result was flavorful and filling. The rest of my family agreed that it was delicious.

P.S. I also tried this Turkey Taco Cups Recipe many years ago when I was on my Biggest Loser kick. It was a special feature on The Biggest Loser: The Workout 2 DVD and I sat there watching Matt and Suzy make this while writing it all out on a sheet of notebook paper. If only it were available online, it would have saved me so much time, but at least those two were fun to watch.

Spring Has Sprung

First off, Happy St. Patrick's Day! If you're familiar with Chicago's Irish traditions, you're well aware that they do it up big. There is a parade downtown, lots of parties at all of the Irish pubs throughout the city, and of course the dying of the Chicago River. Some genius years ago discovered how to make the dirty river look like a giant stream of Ecto Cooler.

Last week the city welcomed back the South Side Irish Parade after a two year hiatus. Since it's only a few blocks away from my home, I walked up there and checked it out with family. Definitely different, but still fun since we took my nephew, niece, and new baby cousin.

This year the best part of the holiday is the weather. Usually March in Chicago is still cold and dreary. Not quite so this time around. This past week's temperatures have been breaking all kinds of records, and today is no exception. A comfortable 81 degrees, I'm sitting in my backyard in a t-shirt and shorts being one with nature...and my blog.


I can't tell you how exciting it was this week to "spring forward" and enjoy more sunlight, hear the birds chirping, and see the tulip bulbs start to sprout their green leaves. Looking around my yard, the trees are starting to bloom and the perennials are waking up.  It's definitely one of my favorite times of year. I just hope it stays this way.


I wish I had a delicious recipe to share with you today, either an Irish Soda Bread or a Grasshopper Cupcakes, but to tell you the truth, I haven't been doing anything thrilling in the kitchen lately.  It's been a lot of same old, same old and nothing blog worthy. I promise to get better at that. Tomorrow for sure. With a giveaway for good measure.

Get Your Peep On - Gluten Free Easter Candy List

We still have a month to go before Easter Sunday (April 8th), but it will be here before you know it.  Whether you're already shopping for Easter Basket goodies or are a procrastinator like me, you'll want to make sure the candies the Easter Bunny brings are safe for your gluten free Easter baskets.

Luckily, earlier this week MyGlutenFacts.com and the National Foundation of Celiac Awareness teamed up to provide an updated list of gluten free candies.  Not only that, there is an entire list just for gluten free jelly-beans!
