In other news, last night I made some chocolate chip zucchini muffins. Yum! I found the recipe about a month ago on Gluten-Free Is Life. While the recipe is for bread, I used Kim's suggestion and made muffins!
I altered the recipe slightly because I didn't have enough Pamela's Baking Mix. I used Jules All-Purpose flour instead. I also didn't have coconut oil, so I used light-tasting olive oil. With all of the swaps, they still turned out delish. Babs had one last night while they were still warm (I made them at 10pm - the baking itch strikes at odd times.) and said they were a little dense. This morning she had one with her coffee and said it was perfect! Maybe those little muffins just needed a good night's sleep. I already ate three today - yikes! They are just too good!

Funny because I recently ran out of my holiday baking cups; all through the summer we were having Christmas muffins. Ha. But muffins, hm, what a good idea! They seem like the perfect cold-weather treat.
