This weekend I had the pleasure of being a part of Bayless Fest. Hosted by the amazing, Jenn of The Whole Kitchen, we dedicated the evening to Rick Bayless. Our Mexican fiesta featured Bayless inspired dishes, some actually his recipes and products. In the company of five food bloggers (and a couple husbands), this evening was definitely a treat.
Jenn made an achiote braised pork shoulder with homemade tortillas for tacos, and horchata ice cream. (I stole her description, as I just remembered it as "that delicious pork") Her corn tortillas were so fresh and thick - not like any I've ever had. Don't even get me started on that horchata ice cream! I had to stop after one dish or I probably would have polished off the entire container! Emily from The View from the 32nd Floor made ceviche and salsa verde. I was literally putting that salsa verde on everything. Loved it!
Stacey from Everyday Soup brought along her husband as well as quinoa and a black bean, mango, and cilantro dish. I love cilantro, black beans, and mango and mixed together had such a sweet, savory, and fresh flavor. I rarely eat quinoa, but after my second helping I decided I need to eat more.
Lisa from Lisa Cooks Allergen Free whipped up some chicken tostadas topped with diced avocado and homemade salsa. Boy, was it good! The onions and peppers gave the chicken a surprisingly spicy kick and then the avocados balanced it with a smooth, rich flavor. I could probably eat that dish everyday.
Me, I made those badass Margarita Cupcakes! I adapted the recipe from RecipeGirl.com, substituting the regular cake mix with Cherrybrook Kitchen's Yellow Cake Mix. The lime buttercream frosting was a little sweet, but sooooo good! I definitely will be making these again.
