I love when I see articles and blurbs in magazines about celiac disease or the advantages of a gluten free diet. I get a little excited and hope that someone undiagnosed reads and benefits from the news. Even those already on a gluten free diet can possibly learn something new.
The September issue of Body & Soul magazine has a great article entitled Going Gluten Free. After reading the first couple of paragraphs, I was worried that it was just another article glorifying a gluten-free diet as a "fad" diet. As I read on, I realized that was not the case. It dispelled those beliefs and acknowledged that yes, people really DO have problems eating wheat. Thank you!
The article gives a run down of symptoms, statistics, and a few words of wisdom from Peter Green, M.D., director of the Celiac Disease Center at Columbia University Medical Center. They list some great resources, links, and even a recipe for gluten free sandwich bread!
