I made these little quick and easy polenta pies using the basil and garlic precooked polenta, some tomato sauce, cheese and fresh basil.
Slice up the polenta and arrange on a cookie sheet. I lined my cookie sheet with parchment paper.
Add a little tomato sauce.
Sprinkle some cheese on there.
Mmm... and some fresh chopped basil.
Pop in a preheated 350 degree oven for about 10-15 minutes or until the cheese is melted.
Enjoy!
I think these would be even better with slices of fresh tomato instead of tomato sauce, but in a pinch the sauce worked just fine.

These look wonderful. Personally, I would prefer the sauce to the tomato.

Very nice, Betsy! I love polenta, but never have it hand. This recipe would make it definitely worthwhile!
