Fun with Polenta!

I rarely eat polenta, but when I do it's always very tasty and I think, "I should eat polenta more often." I have yet to make my own polenta from scratch, although I should as my family owns a "polenta stick" which is basically a large wooden stirrer.

I made these little quick and easy polenta pies using the basil and garlic precooked polenta, some tomato sauce, cheese and fresh basil.

Slice up the polenta and arrange on a cookie sheet. I lined my cookie sheet with parchment paper.


Add a little tomato sauce.



Sprinkle some cheese on there.


Mmm... and some fresh chopped basil.



Pop in a preheated 350 degree oven for about 10-15 minutes or until the cheese is melted.

Enjoy!


I think these would be even better with slices of fresh tomato instead of tomato sauce, but in a pinch the sauce worked just fine.

These look wonderful. Personally, I would prefer the sauce to the tomato.

I'm going to have to clarify because apparently people thought there was a pizza theme this week. I love the ideas though!
